Enchiladas are a great weeknight dinner. They come together quickly and are so tasty that the whole family will enjoy them. And while pre-made, store-bought enchilada sauces are great in a pinch, homemade enchilada sauce is easy to make and will level up your entire meal.
This is a super simple enchilada sauce recipe using fresh ingredients and can be adjusted to your own heat preference. It’s thick and creamy, but the use of Greek yogurt instead of sour cream makes it lighter than other sauce recipes. The roasted veggies pack on the flavor in this recipe.
For an easy enchilada recipe using this sauce, bake and shred about a pound of chicken breasts, then add the chicken, some shredded Mexican cheese blend, and this enchilada sauce in a bowl. Roll this enchilada mixture in flour tortillas, place in an 8”x8” baking dish, and top with more enchilada sauce and cheese. Bake at 350F for about 30 minutes or until cheese is melted.
While this recipe can be used directly in your favorite enchilada recipe, there are so many more uses! Add to eggs, top on a burrito, or add some rice for an enchilada skillet. It’s so delicious that you’ll find uses for it!
